1: Thread hotdogs on a wooden skewer and slice them in a spiral formation, ensuring not to cut all the way through. 2: Cook the hotdogs on a grill until desired crispiness. 3: Husk the corn and add avocado oil to a skillet. 4: Cook corn over medium-high heat for about 3 minutes, until kernels start to brown, turning until all sides are slightly brown. 5: Cut the corn off the cob and add to a bowl with all the remaining Elote corn ingredients. Mix well. 6: In another bowl, add all Chipotle mayo sauce ingredients and mix well. Refrigerate until ready to use.
