1: Rinse the rice in water until clear, then drain. 2: Combine rice, coconut milk, water, and salt in a pot. Add bay leaf and olive oil. 3: Stir until the water is absorbed. Cover and simmer on low for 15-20 minutes. 4: Blend all marinade ingredients in a food processor until incorporated. 5: Cover shrimp with 3/4 of the marinade and refrigerate for 2 hours. 6: Soak wooden skewers in water. 7: Thread shrimp, red bell pepper, and pineapple onto skewers. 8: Heat skillet over medium-high and spray with avocado oil. 9: Cook kebabs for 3 minutes on each side. 10: Serve with coconut rice, topping with remaining marinade and scallions.
