1: In a bowl, mix all sauce ingredients together and set aside. 2: Cook udon according to package directions and set aside. 3: In a wok on medium high heat, add 2 tsp of avocado oil. Add chicken and cook almost all the way through. Add 2 Tbsp of the sauce and sauté for an additional 2 minutes until fully cooked. Remove from the pan and set aside. 4: Add another tsp of avocado oil and add all vegetables except for the broccoli and green onions. Cook, mixing for about 4 minutes until the vegetables are lightly charred. 5: Add in broccolini and green onions and cook for an additional 2 minutes. 6: Add udon noodles, chicken, and remaining sauce. Cook, stirring occasionally for 4 minutes.
