1: Cook the chicken in a pan over medium high heat until the internal temperature reaches 165°F (about 3-4 minutes on each side). 2: Towards the last 2 minutes of cooking, cover with a lid and let it steam to reach its temperature. 3: Cut the chicken into strips. 4: Add olive oil, red wine vinegar, dijon mustard, honey, minced garlic, lemon juice, salt, and ground black pepper to a jar and shake to combine. 5: Place the lettuce in a bowl and toss with the dressing. 6: Add all of the chopped vegetables, chicken, and eggs. 7: Top with feta crumbles and cilantro and enjoy!
