Cajun Salmon with Rice

A delicious Cajun salmon dish served over seasoned basmati rice, complemented with a rich creamy garlic sauce, cherry tomatoes, and fresh spinach.

1: In a pot over medium heat, add olive oil. Then add rice and remaining rice ingredients. Let the rice get to a gentle boil. 2: Stir occasionally until most of the water is absorbed by the rice, then turn down to a low simmer and cover. Let cook for an additional 15-20 minutes. 3: While the rice is cooking, heat a large skillet over medium-high heat. Pat down the salmon with a dry paper towel. 4: Spray salmon with avocado oil and sprinkle with salt, pepper, and cajun seasoning. Sear salmon skin-side down for 3-4 minutes, then flip and sear for an additional 3-4 minutes. Remove from pan and set aside. 5: Add butter and 1 tbsp olive oil to the same pan. Add onions and sauté for 3 minutes. 6: Then add garlic and sauté for an additional 3 minutes. Add red pepper flakes and heavy cream. Season with salt, pepper, cajun seasoning, and cayenne pepper. Let simmer for 2 minutes. 7: Add tomatoes, parmesan cheese, and spinach. Let spinach reduce, about 2-3 minutes. 8: Add basil, then add the salmon back to the pot and coat with sauce. Cover and let simmer for 5-7 minutes on low heat. 9: On a plate, lay down your rice and salmon and cover with sauce. Enjoy!
