1: Chop all vegetables and set aside. 2: Mix all sauce ingredients and set aside. 3: Add 1 Tbsp of oil to a pan on medium heat and sauté onions for 3 minutes. 4: Add ginger and garlic, sauté for an additional minute. 5: Increase heat, add 1 Tbsp oil and then beef. Cook until beef is no longer pink. 6: Once beef is cooked, add peppers and carrots, and cook for 4-5 minutes. 7: Boil water in a pot and add noodles. Cook for 1 minute and 45 seconds. 8: Drain noodles and add them to the vegetable mixture. 9: Add sauce and mix until noodles are fully coated. 10: Taste and adjust seasoning. 11: Top with scallions, sesame seeds, and a soft boiled egg.
