1: Combine all ingredients for the pea puree in a food processor. Process until smooth and set aside. 2: In a saucepan, add vegetable broth and simmer over low heat until ready to use. 3: In a wide pan, add olive oil over medium heat. 4: Add garlic and shallots. Sauté for 2-3 minutes until fragrant. 5: Add rice and mix until it becomes translucent, about 3-4 minutes. 6: Keep heat on medium and add 1 cup of the vegetable stock and stir until it's almost all absorbed. 7: When almost absorbed, keep adding 1 cup of the stock until the rice is soft and the mixture is creamy and thick. This should take about 20 minutes. 8: Add salt and pepper to taste, then add 2 cups of green peas and stir for 2 minutes. 9: Add cheese, mix, and serve with the salmon. Enjoy!
