Delicious waffle sandwiches made with crispy waffles, savory bacon, and perfectly cooked eggs, topped with a rich hollandaise sauce and served with avocado.

1: In a bowl, combine dry ingredients and whisk together. Set aside. 2: In a separate bowl, combine wet ingredients and whisk together. 3: Add the buttermilk mixture to the dry ingredients and mix with a spatula, don't over mix. 4: Add egg whites and mix until just combined. Let sit for 15-30 minutes. 5: Grease both sides of your waffle iron and pour 1 cup of batter into it. Evenly spread the batter, add a dash of maple syrup, and cook. 6: Remove cooked waffles and set aside. 7: In a bowl over a double boiler, add 4 egg yolks and whisk until fully combined. While whisking, add 2 Tbsp of butter at a time until fully combined. Add lemon juice, salt, and cayenne pepper. Whisk until sauce slightly thickens. 8: Cook bacon according to package directions. 9: Slice the avocado. 10: Cook eggs using your desired method. 11: Create your waffle sandwiches by placing down a quarter piece of waffle, 1 piece of bacon cut in half, another waffle quarter, and an egg. 12: Top with hollandaise sauce and chives. Serve with avocado on the side and enjoy!
