A delicious pulled beef sandwich made with tender shredded beef, sautéed onions, gooey provolone cheese, and spicy jalapeños, served on toasted sourdough baguette with a BBQ mayo spread.

1: Slice onion and mix with corn starch. 2: In a pot over medium high heat, fry onion slices in batches until golden brown, about 3 minutes. 3: Remove and add to a plate lined with paper towels. Sprinkle with finishing salt. 4: Preheat oven to 325°F. Cut the chuck roast into cubes and season all sides of the beef with BBQ rub, salt, and pepper. 5: In a Dutch oven over medium high heat, add 1 Tbsp neutral oil and sear beef on all sides. Remove beef and set aside. 6: In the same pot, add tomato paste and cook for about 2 minutes. Add onions, garlic cloves, beef broth, Worcestershire sauce, BBQ sauce, and another Tbsp of BBQ rub. Mix together. 7: Add beef back into the pot, cover, and place in preheated oven for 3 hours and 30 minutes. 8: Remove beef and shred in a sheet pan. 9: Lightly toast bread and spread with BBQ mayo. Add beef, cheese, jalapeño slices, fried onions, and more sauce. Enjoy!
