1: In a pan over medium-low heat, toast pine nuts until slightly brown. 2: In a food processor, combine basil leaves, garlic, pine nuts, olive oil, Parmesan cheese, salt, and pepper. Process until finely chopped and smooth. 3: Spread the pesto on the inside of each slice of bread. 4: Assemble the sandwich by layering mozzarella cheese, red onion, tomatoes, shredded chicken, and avocado. 5: Spread mayo on the outside of one slice of bread. 6: Cook the sandwich in a pan or on a griddle, putting the side with mayo down first. 7: Cook on both sides until golden brown and enjoy!
