A delicious shrimp dish cooked with various vegetables and served over jasmine rice cooked in coconut milk. The shrimp is seasoned and sautéed, then combined with a sweet and tangy sauce featuring soy sauce, brown sugar, and pineapple juice.

1: Rinse rice in water until the water runs pretty clear, then drain the water. 2: Add rice, coconut milk, water, and salt into a small pot or large saucepan over medium-high heat. 3: Add a bay leaf (optional). 4: Stir until most of the water is absorbed by the rice, cover, and simmer on low for about 15 to 20 minutes. 5: Heat olive oil in a large skillet over medium-high heat. 6: Season shrimp with salt and pepper, garlic powder, and cornstarch, then add to the skillet. 7: Cook shrimp and remove from the pan. 8: Add in bell peppers and onions and sauté for 3-5 minutes until tender. 9: Add the sauce to the pan, and bring to a simmer, adding cornstarch and mixing. 10: Add the shrimp back in and the pineapple, and cook on medium-low heat, letting the sauce reduce. 11: Cook until sauce is thick, sticky, and glossy. 12: Serve over rice and enjoy!
