1: In a small pot, heat 3/4 cup of oil. 2: Add shallot slices over medium-low heat and fry for about 20 minutes. 3: In a pot, boil eggs and set aside in ice cold water for about 15 minutes. 4: Crack and peel eggs. 5: In a medium-sized bowl, mix tuna, eggs, mayo, celery, basil, parsley, onion, seasonings, and lemon juice. 6: Slice avocados in half and spray with oil. 7: Grill avocados for about 3 minutes and then remove. 8: Add tuna mixture to the avocados and top with fried shallot slices.
