1: In a pot over medium heat, add olive oil, onion (reserving some for later), poblano pepper, and jalapeño. Stir frequently and cook until softened, about 6 minutes. 2: Add garlic, seasonings, and bay leaf. Stir, and cook for another 3 minutes. 3: Add beef broth and bring to a boil. Then add the ancho pepper, guajillo pepper, and tomatoes. Lower to a simmer and cover for about 15 minutes until tomatoes are softened. 4: Blend mixture with an immersion blender or in a blender until smooth. 5: On a griddle or in a pan over medium heat, toast buns. Remove and set aside. 6: Over high heat, cook burger patties. Add salt and pepper and flip. Add cheese slices and cook until cheese is melted and patties are cooked through. 7: In a small bowl add mayo and desired amount of consume, about 4 Tbsp. Mix to combine. 8: Assemble the burger, dip in the Birria consumé, and enjoy!
