Shrimp and Sausage Orzo

A flavorful dish combining medium shrimp and smoked beef sausage with orzo, cooked in chicken stock and finished with heavy cream and spinach.

1: In a bowl, season shrimp with salt, Italian seasoning, and paprika. 2: In a sauté pan over medium heat, add 2 Tbsp olive oil and cook shrimp for 4-5 minutes. Remove and set aside. 3: In the same pan, add another Tbsp of olive oil and add sausage. Cook for 5 minutes until lightly browned. Remove and set aside. 4: Add shallots, garlic, and sun-dried tomatoes. Sauté while scraping the bottom of the pan for about 3 minutes. 5: Deglaze the pan with about 1/4 cup of chicken stock. Mix in orzo for about 1 minute until toasted. 6: Add remaining chicken stock, salt, and pepper, and bring to a gentle boil. Reduce to a simmer and cook for about 12 minutes. 7: Mix in heavy cream. Add spinach and mix. Cover for about 3 minutes until spinach is wilted. 8: Remove cover and mix in sausage and shrimp. Enjoy!
