1. Cut 2 lbs of Golden or Russet potatoes into even wedges. 2. Soak the potato wedges in ice water for about 20 minutes to remove excess starch. Drain thoroughly and pat dry, ensuring to remove as much moisture as possible. This step is crucial for crispy potatoes. 3. Preheat your oven to 450°F (230°C). 4. In a large bowl, combine the dried potato wedges with 1/4 cup olive oil, 1/2 Tsp garlic powder, 1/2 Tsp onion powder, 2 Tsp salt, 1/4 Cup grated Parmesan cheese, 1 Tsp pepper, and 1 Tsp smoked paprika. Toss until the potatoes are evenly coated. 5. Line a rimmed baking sheet with parchment paper.
