1: In a large pot or dutch oven, heat oil over medium high heat. 2: Add flour and whisk to combine. 3: Using a wooden spoon, stir continuously for 15 minutes or until the mixture turns to a deep caramel color. 4: Add onions, bell peppers, and celery. Cook for about 8-10 minutes, stirring often. 5: Once the vegetables have softened, add sausage, garlic, and bay leaves. Cook for an additional minute until garlic is fragrant. 6: Add cajun seasoning, Tabasco sauce, cayenne pepper, chicken broth, and tomatoes. Bring to a high simmer then lower the heat to medium-low. 7: Cover and simmer for 15 minutes. 8: Add the shrimp, stir, and continue to simmer for another 10-15 minutes or until the shrimp is fully cooked. 9: Season with salt and pepper to taste. Add the gumbo filé and stir. 10: Serve in a bowl and top with rice and scallions. Enjoy!
