1: Remove the steak from the fridge 30 minutes before cooking. 2: Pat the steak dry with a paper towel. 3: Brush both sides of the steak with butter and season with salt and pepper. 4: Season one side of the steak with the rub, reserving 1 Tbsp for the corn. 5: Place the steak on a wire rack inside a broiler pan. 6: Broil the top of the steaks for about 4 minutes, then flip and broil for another 4 minutes. 7: Let steak rest for 5 minutes before cutting. 8: In a small saucepan over low heat, add the milk and let simmer. 9: In a medium saucepan over medium high heat, melt the butter. 10: Add the onions and cook until softened, about 3 minutes. 11: Add the garlic and cook until fragrant, about 30 seconds. 12: Stir in the flour and cook for about 1 minute until it turns a pale blond color. 13: Add the milk, whisking continuously over high heat until it thickens and coats the back of a spoon, about 3 minutes. 14: Turn the heat to low and add the rub spices, roasted poblano pepper, red bell pepper, and corn. 15: Cook for about 4 minutes, until corn is tender. 16: Mix with salt and pepper and enjoy!
