A delicious recipe for 1 1/2 inch thick steak served with creamy layered potatoes topped with cheddar and Gruyère cheese, seasoned with garlic, smoked paprika, and fresh thyme.

1: Slice potatoes 1/8” thick and layer in a 9x7 baking dish. 2: Chop onion and spread evenly across potatoes and crevices. 3: In a small pan, add garlic and shallot, and let cook for about 2-3 minutes until fragrant. 4: Add heavy cream, paprika, pepper, salt, and thyme. Let simmer for about 5 minutes. 5: Add 3/4 cup shredded Gruyère cheese and 3/4 cup shredded cheddar cheese. Once fully melted, pour mixture over potatoes completely, including crevices. 6: Cover with foil and bake at 350° for 1 hour. 7: Remove from oven and add remaining Gruyère and cheddar cheese. Bake uncovered for 15 minutes. 8: If desired, broil for an additional 5 minutes to make cheese crispy. 9: Season steak and cook using your desired method (sous vide recommended for 1 hour at 133°). 10: Sear steak on each side for about 30 seconds to a minute. 11: Add butter or a butter compound to your steak. 12: Serve with potatoes and enjoy!
