1: Add all pesto ingredients (broccoli, jalapeño, garlic, lemon juice, basil, Parmigiano Reggiano, salt, and pine nuts) to a food processor or blender and blend until fully incorporated. 2: Boil pasta until al dente. Reserve pasta water. 3: In a bowl, add chicken and drizzle with olive oil to coat. Add all seasonings and mix until each piece is coated. 4: In a pan over medium heat, add 2 teaspoons of olive oil and the chicken. Cook for 5-6 minutes, until internal temperature reaches 165°F. Remove chicken and set aside. 5: In the same pan, add onions and cook for 2-3 minutes. 6: Add pasta and pesto sauce. Mix and add small amounts of pasta water until sauce reaches desired consistency. 7: Add chicken and mix. Serve and enjoy!
