1: In a small bowl, add taco seasoning ingredients and mix. 2: Cover chicken cubes in olive oil and season with 1/3 of the taco seasoning. 3: In a skillet over medium high heat, add olive oil and cook chicken all the way through. Remove and set aside. 4: In the same skillet add more olive oil, peppers, and onions. Add more taco seasoning. Sauté until lightly browned and translucent. 5: Add tomato paste, mix, and cook until browned. 6: Add chicken broth, scraping the sides and bottom of the pan. Let simmer for about 3 minutes until slightly reduced. 7: Add heavy cream, more taco seasoning for desired flavor, and Laughing Cow cheese. Mix until well combined and cheese has melted. 8: Add chicken back into the pan and drop to a simmer. 9: Cook pasta until al dente. Reserve 1 cup of pasta water. 10: Add pasta to the pan and mix. Add chopped cilantro and mix. 11: Add small amounts of pasta water to reach desired sauce thickness. 12: Top with Parmesan cheese and enjoy!
