Cook for about 3 minutes. 3: Add sugar and mix. 4: Cook onions stirring often for about 35-40 minutes until onions are translucent, soft, and slightly browned. 5: Turn heat to medium and mix in garlic. Caramelize for 2 minutes. 6: Add sherry to deglaze the pot and cook for 2 minutes until it evaporates. 7: Add flour and continue to stir and cook for another 2 minutes. 8: Add wine and cook for 2 more minutes. 9: Add beef stock, beef bouillon, Worcestershire sauce, bay leaf, thyme, salt, and pepper. 10: Let simmer for 30 minutes over medium low heat. 11: Scoop the soup into small, oven safe bowls or ramekins and top with toasted bread slices. 12: Sprinkle with cheese. 13: Broil in the oven until cheese is melted and slightly browned.
