1: Preheat oven to 350°F. 2: In a large pot of boiling water, cook macaroni until al dente. 3: Melt the butter in a large saucepan over medium-low heat. 4: Add garlic and shallot and cook until fragrant. 5: Whisk in flour. 6: Turn the heat off and whisk in milk. 7: Turn the heat back to medium and whisk continuously for about 2 minutes until it thickens. 8: Stir in smoked paprika, dry mustard, black pepper, and salt. 9: Next, add the 3 cheeses and mix to melt. 10: Drain macaroni and stir it into the cheese mixture until completely covered. 11: Butter a baking dish and pour in the macaroni and cheese. 12: Top with more shredded cheese and bake for about 35 minutes until lightly browned and bubbling. 13: Broil for an additional time for an extra crispy top. 14: Top with chives and enjoy!
