1: Oil potatoes and sprinkle with salt. Bake in preheated oven at 425°F for 65-70 minutes, or until potatoes are fork tender. 2: Remove and let potatoes cool. 3: Scoop out the insides gently, place in a bowl, and mash until smooth. 4: Add a tsp of butter to a pan over medium heat. Sauté onions and garlic until fragrant, 2-3 minutes. 5: In a pot over medium heat, melt butter. Add heavy cream and mix. Remove from heat. 6: Add onions, garlic, and cream mixture to the potatoes. Mix until fully combined. Add a cup of cheddar cheese and salt and pepper to taste. 7: Scoop potato mixture back into the skins. 8: Top with chili and sprinkle with cheddar cheese. 9: Bake in the oven for an additional 15 minutes. 10: Top with sour cream and jalapeños and enjoy!
