1: In a skillet over medium high heat, add olive oil and ground beef. Break the beef into small pieces and cook until almost fully browned. 2: Add chopped onions and seasonings (salt, pepper, onion powder, garlic powder, smoked paprika). Cook until onions are soft and translucent. 3: In a small pan, add whole milk and simmer until hot. Then melt butter in the same pan. 4: Combine melted butter with flour in the small pan to make a roux. Gradually add in the hot milk, and then add the shredded cheddar cheese until melted. 5: In a pot, add olive oil, basmati rice, and water over medium high heat. Add salt and bay leaves, bring to a boil, then cover and simmer on low for 15-20 minutes. 6: Once rice is cooked, add cilantro and lime juice. 7: In a bowl, combine mayo, water, lime juice, salt, chili powder, smoked paprika, and chipotle adobo sauce to make the chipotle sauce. 8: Warm the tortillas. On one tortilla, add a layer of shredded cheese and nacho cheese, then top with another tortilla. 9: Fill the burrito with avocado, rice, black beans, beef, jalapeños, and chipotle sauce. 10: Roll into a burrito and cook for about a minute on the outside. Enjoy!
