First, prepare the sauce by combining 1/4 cup mayo, 2 Tbsp Dijon mustard, 1/2 tsp onion powder, 1/2 tsp garlic powder, and 1/2 tsp paprika in a small bowl. Set aside. Season the chicken breast with salt, pepper, and garlic powder. Heat a pan over medium-high heat with olive oil and butter. Add the seasoned chicken and cook on both sides until its internal temperature reaches 165°F. Once cooked, add pepper jack cheese to the chicken in the pan and place it in the oven (or cover the pan) until the cheese melts. Toast the sourdough bread. To assemble, spread the special sauce on the toasted bread. Layer with lettuce, Campari tomatoes, sliced red onions, avocado, bacon, and the cheesy chicken. Enjoy your sandwich!
