1: Add all sauce ingredients to a bowl and blend using an immersion blender. 2: In a large bowl, add all vegetables and sauce. Toss vegetables in the sauce, cover, and let sit in the refrigerator while the rest of your food cooks. 3: Season dover sole fillets with salt, pepper, and adobo seasoning. 4: Place flour in a large shallow bowl and dip the fillets in the flour, coating both sides and shaking off any excess. 5: Heat olive oil in a large skillet over medium-high heat. Add the fish and cook for about 3 minutes on each side until golden and crispy. Remove fish and set aside. 6: In the same pan, turn heat to low and add white wine and lemon juice. Bring to a simmer and let reduce by half. 7: Add butter, capers, diced tomato, and sliced garlic to the pan. Turn heat to very low and mix until the butter has melted. 8: Sprinkle with minced parsley and add salt and pepper to taste.
