1: In a large pot over medium heat, add bacon and fully cook. 2: Remove bacon and excess fat. Set aside. 3: In the same pot add 2 Tbsp butter and leek. Sauté for 2 minutes, remove, and set aside. 4: Add remaining 3 Tbsp butter and flour to form the roux. Whisk together for 3 minutes until slightly brown. 5: Add milk, heavy cream, thyme, and garlic. Whisk until thickened, about 5 minutes. 6: Add 3 cups cheese and mix until well incorporated. 7: Add salt, pepper, macaroni, bacon, and leek. Mix until well combined. 8: Pour into a baking pan and top with remaining cheese. 9: Bake at 350ºF for 20-25 minutes, until slightly browned.
