What you need

tbsp butter

pinch salt

onion

celery

tbsp cajun seasoning

clove garlic clove

oz lobster tail

bunch fresh chives

hot dog bun

Instructions
1: With a mandoline, thinly slice potatoes. 2: Place sliced potatoes in ice water for a few minutes to release starch, then pat dry. 3: Flash fry the potatoes at 350°F for 4 minutes, remove, then increase heat to 375°F and fry again for an additional 4 minutes. 4: Drain the potatoes and toss in a bowl with Cajun seasoning. 5: Add water about 2 inches high to a medium pan and bring to a boil. 6: Add a steamer insert to the pot and place lobster tails in the steamer, covering the pan. 7: Cook lobster for 8 minutes until shells are bright red. 8: In a pan, melt 1 Tbsp of butter over medium high heat and toast the buns, then set aside. 9: In the same pan, melt 3 Tbsp of butter and add onion, celery, garlic, salt, and Cajun seasoning. Cook until tender. 10: Cut the lobster and add to the pan, mixing well. 11: Serve the lobster mixture on the toasted buns with a side of potato chips.View original recipe
