Instructions
1. Combine chopped mangos, red bell pepper, onion, jalapeno, salt, pepper, and lime juice in a bowl to make the mango salsa. Mix well and place in the fridge. 2. In a blender or food processor, combine sour cream, minced garlic cloves, cilantro, mayonnaise, salt, and lime juice. Blend until well combined to create the cilantro sauce. 3. Add shrimp to a bowl and mix with Old Bay seasoning. 4. Set up a breading station: whisk 2 eggs in a small bowl, place flour in a large bowl, and panko bread crumbs in another bowl. 5. Dip each shrimp first in the flour, then in the eggs, and finally in the panko bread crumbs, pressing the breadcrumbs firmly to ensure they stick. 6. In a medium pan, heat vegetable oil to 350°F. 7. Add the breaded shrimp to the hot oil and cook until golden brown, about 2 minutes per side. 8. Warm your flour tortillas. 9. To assemble, place red cabbage on a warm tortilla, add a few pieces of fried shrimp, top with mango salsa, and drizzle with cilantro sauce.
