
Fajita Chicken Pasta
A delicious and creamy Fajita Chicken Pasta with a blend of spices and colorful peppers, topped with Parmesan cheese for a delightful flavor.
What you need

green bell pepper

tbsp tomato paste
tsp dried oregano

cup cilantro

red bell pepper

box fusilli pasta

tsp salt

cup heavy cream
lb chicken breast

tsp ground cumin

tsp black pepper

cup chicken broth

yellow onion

tsp garlic powder

tsp paprika

oz parmesan cheese

tbsp chili powder

yellow bell pepper

tsp onion powder

tsp red pepper

oz sharp cheddar
Instructions
1: In a small bowl, add taco seasoning ingredients and mix. 2: Cover chicken cubes in olive oil and season with 1/3 of the taco seasoning. 3: In a skillet over medium high heat, add olive oil and cook chicken all the way through. Remove and set aside. 4: In the same skillet add more olive oil, peppers, and onions. Add more taco seasoning. Sauté until lightly browned and translucent. 5: Add tomato paste, mix, and cook until browned. 6: Add chicken broth, scraping the sides and bottom of the pan. Let simmer for about 3 minutes until slightly reduced. 7: Add heavy cream, more taco seasoning for desired flavor, and Laughing Cow cheese. Mix until well combined and cheese has melted. 8: Add chicken back into the pan and drop to a simmer. 9: Cook pasta until al dente. Reserve 1 cup of pasta water. 10: Add pasta to the pan and mix. Add chopped cilantro and mix. 11: Add small amounts of pasta water to reach desired sauce thickness. 12: Top with Parmesan cheese and enjoy!View original recipe
