Instructions
1: Cut the bacon into small pieces and cook in a pan over medium high heat for about 10 minutes, stirring frequently until just crispy. 2: Remove and reserve about 2 tablespoons of bacon grease in the pan. 3: Add the onions to the pan and cook for about 10 minutes, season with salt and pepper, and reduce the heat to low. 4: Add half the thyme and all the garlic, and cook for another 5 minutes, stirring occasionally. 5: Add the brown sugar and stir, continue to cook until the onions have caramelized, about 20 minutes. 6: Add the bacon and water and continue to cook for 5 minutes. 7: Then add balsamic vinegar and remaining thyme, stirring occasionally until the onions are thick and jam-like, about 25-30 minutes. 8: For the Caesar dressing, add all ingredients (mayo, garlic, anchovy paste, Dijon mustard, Worcestershire sauce, lemon juice, grated Parmigiano-Reggiano, sea salt, fresh ground pepper) to a bowl and blend with an immersion blender or regular blender. 9: Mix all ingredients to combine.View original recipe
