What you need

oz cheddar cheese

tbsp unsalted butter

tsp smoked paprika

shallot

cup all purpose flour

tsp salt

oz parmigiano reggiano

tsp ground black pepper

tsp dry mustard

oz macaroni
Instructions
1: Preheat oven to 350°F. 2: In a large pot of boiling water, cook macaroni until al dente. 3: Melt the butter in a large saucepan over medium-low heat. 4: Add garlic and shallot and cook until fragrant. 5: Whisk in flour. 6: Turn the heat off and whisk in milk. 7: Turn the heat back to medium and whisk continuously for about 2 minutes until it thickens. 8: Stir in smoked paprika, dry mustard, black pepper, and salt. 9: Next, add the 3 cheeses and mix to melt. 10: Drain macaroni and stir it into the cheese mixture until completely covered. 11: Butter a baking dish and pour in the macaroni and cheese. 12: Top with more shredded cheese and bake for about 35 minutes until lightly browned and bubbling. 13: Broil for an additional time for an extra crispy top. 14: Top with chives and enjoy!View original recipe
