A delicious BBQ Beef Burrito made with leftover shredded beef, crisped up and filled in tortillas with Pepper Jack and White cheddar cheese. Accompanied by a fresh guacamole made from 3 avocados, red onions, cilantro, and lime juice. It is served with beef stock rice cooked to perfection.

Instructions
1: Broil the leftover shredded beef in a pan until the edges are slightly crispy. 2: Prepare guacamole by mixing 3 avocados, 1/4 cup of red onions, 1/3 cup of minced fresh cilantro, and the juice of 1/2 lime until combined. 3: For the beef stock rice, rinse 2 cups of rice in water until it runs clear, then drain. 4: In a saucepan, add the rinsed rice, 1 cup of leftover beef juices, 1/2 cup of water, and a pinch of salt over medium-high heat. 5: Optionally, add a bay leaf to the saucepan, then stir until most of the liquid is absorbed. 6: Cover the saucepan and simmer on low for about 15 to 20 minutes. 7: Assemble the burritos by filling tortillas with crispy beef, cheeses, and guacamole.View original recipe
