What you need

fl oz avocado oil

bay leaves

cup beef broth

tsp pepper

tsp salt

cup red wine

tbsp red wine vinegar

cup all purpose flour

Instructions
1: Mix flour and pepper in a bowl. Add the beef and coat all sides. 2: In a large pot over medium-high heat, heat avocado oil until it starts glistening. 3: Add the beef and cook on all sides until browned, about 5 minutes. Then remove the beef and set aside. 4: In the same pot, add red wine vinegar and red wine. Cook over medium-high heat, and scrape up any browned bits that have stuck to the pan. 5: Next, add the beef back to the pot along with the beef broth and bay leaves. 6: Bring to a boil and then reduce to a low simmer. Cover and cook, stirring occasionally. Cook for about 1 hour and 30 minutes, until the beef is tender. 7: Add the onions and carrots and simmer, covered, for 10 minutes. 8: Add the potatoes, salt, pepper, and parsley.
