cup low sodium beef broth

Instructions
1: Preheat oven to 350°. 2: Season short ribs with salt and pepper. 3: Heat avocado oil in a large oven-safe pot over medium-high heat. 4: Brown short ribs for about 2-3 minutes on each side; remove and set aside. 5: Add celery, carrots, and onion to the pot; cook over medium-high heat until onions are browned (about 5 minutes). 6: Add flour and tomato paste; stir continuously until well combined and dark red (about 2-3 minutes). 7: Stir in wine and return short ribs to the pot; bring to a boil. 8: Reduce heat to medium and simmer until wine is reduced by half (about 25 minutes). 9: Add rosemary, oregano, thyme, bay leaves, and garlic; stir in beef stock and season with salt and pepper to taste. 10: Bring to a boil, cover, and transfer to oven. 11: Cook until short ribs are tender (about 4 hours). 12: Serve with mashed potatoes and broccolini; top with sauce and chives.View original recipe
