What you need

cup spinach

cilantro

lb italian sausage

tbsp butter

cup yellow onion

tbsp lime juice

salt

pepper

Instructions
1: Mix ingredients in a bowl and place in fridge until time to use. 2: Cook bacon according to package directions. 3: In a pan, cook Italian sausage according to package directions. Remove sausage and set aside. 4: In the same pan, add 2 Tbsp butter and spinach and cook until wilted. 5: Whisk eggs together in a bowl. 6: Add the remaining butter to the pan and then add the eggs and cook through. 7: Add salt and pepper, sausage, and chopped bacon. Mix until fully incorporated and remove from heat. 8: Over medium high heat, spray a griddle or large pan with avocado oil. 9: Add a tortilla and sprinkle with cheese. Let cheese melt slightly before adding the egg mixture. 10: Top with more cheese, fold in half, and press down to flatten. 11: Cook on both sides until golden and crispy. 12: Cut into pieces, serve with pico de gallo, and enjoy!View original recipe
