What you need

tsp salt

oz cheddar cheese

red bell pepper

bacon

lb breakfast sausage

tbsp cajun seasoning

pepper
lb potato

bunch scallion

Instructions
1: Chop potatoes into small cubes and rinse in water to remove the starch. 2: In a cast iron skillet, cook sausage on medium high heat. Remove from the pan and set aside. 3: Cook bacon until crisping. Remove and leave 2-3 tablespoons of bacon drippings in the skillet. 4: Add potatoes to the skillet. Cook on medium high until tender. 5: Add onions and peppers. Season with Cajun seasoning, salt, and pepper. 6: Add sausage back to the pan and mix together. 7: Make three holes within the potato mixture. 8: Crack one egg in each hole. 9: Add shredded cheese and cover on low heat until egg whites are fully cooked, about 10 minutes. 10: Top with crumbled bacon and scallions.
