What you need

lb potato gnocchi

butternut squash

cup water

Instructions
1. Peel and dice the butternut squash. Finely chop the onion, garlic, sage, and thyme. 2. Heat olive oil in a large pan. Add the Italian sausage and cook, breaking it up, until browned. Remove from the pan and set aside. 3. In the same pan, add the butternut squash and onion, and saute until softened. 4. Stir in the minced garlic and chopped herbs and cook for another minute. 5. Add water to the pan, bring to a simmer, and cook until the squash is very tender. 6. Use an immersion blender to blend the vegetables into a smooth sauce. 7. Cook the gnocchi in boiling water according to package directions. Drain. 8. Add the cooked gnocchi to the butternut squash sauce. 9. Stir in the caramelized onion cheese spread until fully melted and combined. 10. Add the fresh spinach and stir until it has wilted into the sauce. 11. Return the cooked sausage to the pan and mix everything together. 12. Serve hot.
