
Cajun Salmon with Rice

A delicious Cajun salmon dish served over seasoned basmati rice, complemented with a rich creamy garlic sauce, cherry tomatoes, and fresh spinach.

What you need

fl oz avocado oil

tsp garlic powder

bunch thyme sprigs
cup basmati rice

cup heavy cream
tsp salt

cup water

tsp cajun seasoning

cup spinach

tbsp basil

pepper

cup parmesan cheese

tbsp butter

tsp onion powder

tsp olive oil
salmon fillet

tsp red pepper flake

clove garlic clove

cup cherry tomato

white onion

tbsp chicken bouillon
Instructions
1: In a pot over medium heat, add olive oil. Then add rice and remaining rice ingredients. Let the rice get to a gentle boil. 2: Stir occasionally until most of the water is absorbed by the rice, then turn down to a low simmer and cover. Let cook for an additional 15-20 minutes. 3: While the rice is cooking, heat a large skillet over medium-high heat. Pat down the salmon with a dry paper towel. 4: Spray salmon with avocado oil and sprinkle with salt, pepper, and cajun seasoning. Sear salmon skin-side down for 3-4 minutes, then flip and sear for an additional 3-4 minutes. Remove from pan and set aside. 5: Add butter and 1 tbsp olive oil to the same pan. Add onions and sauté for 3 minutes. 6: Then add garlic and sauté for an additional 3 minutes. Add red pepper flakes and heavy cream. Season with salt, pepper, cajun seasoning, and cayenne pepper. Let simmer for 2 minutes. 7: Add tomatoes, parmesan cheese, and spinach. Let spinach reduce, about 2-3 minutes. 8: Add basil, then add the salmon back to the pot and coat with sauce. Cover and let simmer for 5-7 minutes on low heat. 9: On a plate, lay down your rice and salmon and cover with sauce. Enjoy!View original recipe
