1: Cut skirt steak into 2 or 3 pieces. 2: Add all marinade ingredients to a bowl and mix well. Let marinate for about 2 hours. 3: Cook the marinated steak in a skillet on high heat for 6-8 minutes on each side or to your preferred doneness. 4: For fries, after skinned and sliced, add the potatoes to a bowl of ice water until ready to fry. 5: Heat frying oil in a pan until temperature reaches 350°F. Fry the potatoes for 4 minutes. 6: Remove fries and place them on a rimmed baking sheet. 7: Increase oil temperature to 375°F. Add fries back into the pan and fry for an additional 3-4 minutes, until golden brown. 8: Toss fries in a bowl with finishing salt. 9: For guacamole, combine avocados, red onions, cilantro, lime juice, jalapeños, and salt and pepper in a bowl. 10: For tomato salsa, combine tomatoes, onions, cilantro, jalapeños, lime juice, lemon juice, and salt and pepper in a bowl. 11: Create burrito by adding a layer of guacamole, sour cream, steak, fries, cheese, and salsa to the tortilla. 12: Roll the tortilla into a burrito and toast outside if desired. 13: Enjoy!View original recipe
