What you need

Instructions
1: In a bowl mix chicken thighs, seasonings, and 1 tablespoon of olive oil until well combined. 2: In a skillet over medium-high heat, add remaining 2 tablespoons of olive oil and place chicken skin side down. Cook for 5-7 minutes. 3: Flip chicken and cook on the other side for an additional 5-7 minutes. 4: Remove chicken from the pan and add in onion and peppers, sautéing for about 5 minutes. 5: Add in seasonings, then pour in rice and chicken broth. Let the rice get to a gentle boil, stirring for about 4 minutes until most of the liquid is reduced. 6: Lay chicken on top of the rice, cover, and simmer for about 15-20 minutes until chicken and rice are fully cooked. 7: For crispy chicken skin, place under broiler for 2-5 minutes. 8: Serve chicken over rice and enjoy!View original recipe
