What you need

lb chicken thigh

tsp chicken bouillon

tsp garlic powder

tsp onion powder

tsp salt

tsp white pepper
cup cornstarch

cup all purpose flour

tsp paprika

tsp pepper

tsp chili powder

cup club soda

cup mayonnaise

tbsp mustard

chive

lemon juice

clove garlic
Instructions
1: Combine all chicken ingredients and mix. 2: Cut chicken into medium pieces and add to a food processor with all chicken seasonings. Pulse until well broken up. 3: Form chicken mixture into 4-ounce balls and press down to form patties. 4: Place patties on a sheet lined with parchment paper and freeze for 25-30 minutes. 5: In a mixing bowl, add all batter ingredients except for club soda. Mix to combine. 6: Heat frying oil in a pot until temperature reads 350°F. 7: Add club soda to the remaining batter while whisking to get a smooth batter. 8: Dip each chicken patty into the batter to coat both sides. 9: Remove carefully and add to the hot oil, frying about 2 patties at a time until golden brown and the internal temperature reaches 165°F-170°F. 10: Place patties on a wire rack to let excess oil drain.
