
Chicken Skewers and Rice

Delicious chicken and vegetable skewers marinated in a blend of seasonings served with lemon dill rice and tzatziki sauce. Perfect for a quick dinner and easy to prepare. Mix chicken and vegetables with olive oil and spices, then broil to perfection. Serve alongside rice cooked in chicken broth and finished with lemon and dill, along with a refreshing salad.

What you need

pepper
tsp oregano

cup olive oil

yellow bell pepper

tsp paprika

tsp cardamon

cup dill
tsp mint

red onion

tbsp lemon juice
green bell pepper

red bell pepper

clove garlic clove

cucumber

lemon zest

chicken breast

tsp garlic powder

cup rice

lemon
cup chicken broth

bunch cherry tomato

cup greek yogurt

tsp cracked black pepper

tsp fine sea salt
Instructions
1: Add chicken and vegetables to a large bowl with the above seasonings and olive oil. Mix until chicken and vegetables are fully coated. 2: Slide the vegetables and chicken onto the skewers. Brush the skewers with the sauce left in the bowl. Reserve the remaining sauce for later. 3: Place on a rack in the oven and broil on high for 6 to 7 minutes. Flip and brush more sauce onto the skewers. 4: Broil for another 6 to 7 minutes or until internal temperature reaches 165°F. 5: For tzatziki sauce, add all ingredients to a bowl and mix to combine. 6: For lemon dill rice, in a saucepan, over medium heat, add olive oil and garlic. Sauté garlic until fragrant, about 30 seconds. 7: Add rice and chicken broth. Mix and add salt and lemon zest. 8: Bring to a boil and lower to a simmer. Cover for about 15-20 minutes until rice is fluffy and fully cooked. 9: Then add lemon juice and dill. Mix until fully combined. 10: For the salad, add all ingredients to a bowl and mix to combine.View original recipe
