Instructions
1: Preheat oven to 375°F. 2: Cover potatoes with olive oil and season; place on a baking sheet for 1 hour, flipping halfway. 3: Slice chicken breasts in half and flatten with a rolling pin. 4: Crush Ritz crackers and mix with garlic powder, onion powder, salt, and pepper. 5: Beat eggs in a small bowl and season with salt and pepper. 6: Dip chicken in egg mixture, then in cracker mixture, coating both sides. 7: In a pan, heat 2 Tbsp butter with garlic and shallots for 2-3 minutes. 8: Add chicken stock and simmer for 3 minutes. 9: Stir in lemon, heavy cream, and Parmesan; season and simmer until thickened. 10: Line a baking sheet with foil or parchment; place chicken and add butter slices on each. 11: Bake chicken for 45 minutes until internal temperature reaches 165°F. 12: Serve with potatoes and vegetables, drizzling sauce on top and garnishing with basil.View original recipe
