Instructions
1: Preheat oven to 425°F and prepare a baking sheet with foil and a rack. 2: Cut chicken in half lengthwise and flatten it with a rolling pin to an even thickness. 3: Season the chicken with salt and pepper. 4: Prepare three shallow pans with flour batter, egg batter, and breadcrumbs. 5: Dip chicken in the flour, then the egg, and finally the breadcrumbs. 6: Place coated chicken on the baking rack and spray with avocado oil. 7: Bake for 13 minutes, flip, and bake for an additional 13 minutes until golden brown. 8: In a pan over medium heat, cook corn and beans together, seasoning with onion powder, garlic powder, and salt for 7 minutes. 9: Set the corn and beans aside and cut the vegetables and chicken. 10: In a bowl, combine lettuce, corn, beans, tomatoes, and tortilla strips; toss with BBQ sauce and ranch dressing. 11: Toast the tortillas and add avocado, salad, and chicken before rolling up your burrito.View original recipe
