What you need

Instructions
1. Peel and finely dice the carrot. 2. Finely dice the celery and onion. Combine all diced vegetables in a bowl. 3. In a large skillet, heat oil over medium-high heat. Add the ground meat and cook until browned, breaking it apart with a spoon. 4. Add the diced vegetables to the skillet and cook until they soften. Season with salt and pepper. 5. Stir in the tomato paste and thyme until well combined. 6. Pour in the beef broth, bring to a simmer, and cook for a few minutes to allow the flavors to meld. 7. Stir in the peas and fresh parsley. Remove from heat and set aside. 8. In a separate pan, gently heat the mashed potatoes. Stir in milk, butter, grated cheddar, half of the parmesan, and the egg yolk until smooth and creamy. 9. Pour the meat filling into a baking dish and spread evenly. 10. Top the filling with the mashed potato mixture, spreading it to cover the entire surface. 11. Use a fork or spoon to create a textured surface on the potatoes and sprinkle the remaining parmesan cheese on top. 12. Bake in a preheated oven until the top is golden brown and the filling is bubbly. 13. Garnish with freshly chopped chives before serving.
