cup panko breadcrumbs

Instructions
1: Season chicken with salt and pepper. 2: In 3 large shallow bowls, add the breadcrumbs, eggs, and flour. 3: Dip the chicken into the flour and fully coat both sides, shaking off any excess. 4: Dip the chicken into the egg mixture. 5: Dip the chicken into the breadcrumb mixture, pressing breadcrumbs into the chicken to coat thoroughly. 6: In a pan, heat oil to 350°F. 7: Add the chicken and fry on both sides until golden brown, with an internal temperature of 165°F. 8: Remove and immediately top with grated Parmesan cheese. 9: For the pesto sauce, combine all ingredients in a food processor and process until fully incorporated.View original recipe
