cup parsley

tbsp duck fat

oz parmesan cheese

Instructions
1: Preheat oven to 450°F. Add water to a large pot, leaving about an inch of room at the top. Heat water on high until it starts to boil. 2: Add potatoes to a large bowl and mix with 2 Tbsp salt and baking soda. 3: Add potatoes to the pot of boiling water and boil for about 20 minutes, just until fork tender. 4: Drain potatoes and add back to the pot to dry out excess moisture. Add duck fat, 1 tsp salt, and 1/2 tsp pepper to the potatoes. 5: Add potatoes to a sheet pan and roast in the oven for 15 minutes. 6: Remove the potatoes and lightly mix. Add the potatoes back to the oven for another 15 minutes. 7: In a small bowl add olive oil, garlic, parsley, salt, and pepper. Add the mixture to the potatoes and cook for another 10 minutes. 8: Add potatoes to a bowl with Parmesan cheese and toss. 9: For the sauce, add all sauce ingredients to a small bowl and mix until fully combined.View original recipe
