What you need

tsp lemon juice

tbsp unsalted butter

tbsp cajun seasoning

Instructions
1: Add 4 egg yolks in a bowl over a double boiler, whisk until fully combined. 2: While whisking, add 2 Tbsp of butter at a time until all butter is fully combined with egg yolks. 3: Add lemon juice, salt to taste, and cayenne pepper. Whisk until sauce slightly thickens. 4: Remove from double boiler if sauce thickens too fast to prevent breaking. 5: In a heavy bottom pan or cast iron skillet, add oil and potatoes over medium high heat. 6: Lower heat and simmer covered as potatoes develop color. 7: Add 2 Tbsp butter, onion, and pepper until vegetables soften. 8: Add Cajun seasoning and salt and pepper to taste.
