What you need

bunch thyme

bay leaf

tsp black pepper

cup dry white wine

tsp worcestershire sauce

tbsp sherry

tbsp unsalted butter
clove garlic

tsp sugar
tbsp ap flour

tbsp olive oil

cup beef stock

lb onion

tbsp beef bouillon
Instructions
1: Melt butter and olive oil in a large pot over medium heat. 2: Add onions and mix to coat with butter. Cook for about 3 minutes. 3: Add sugar and mix. 4: Cook onions stirring often for about 35-40 minutes until onions are translucent, soft, and slightly browned. 5: Turn heat to medium and mix in garlic. Caramelize for 2 minutes. 6: Add sherry to deglaze the pot and cook for 2 minutes until it evaporates. 7: Add flour and continue to stir and cook for another 2 minutes. 8: Add wine and cook for 2 more minutes. 9: Add beef stock, beef bouillon, Worcestershire sauce, bay leaf, thyme, salt, and pepper. 10: Let simmer for 30 minutes over medium low heat. 11: Scoop the soup into small, oven safe bowls or ramekins and top with toasted bread slices. 12: Sprinkle with cheese. 13: Broil in the oven until cheese is melted and slightly browned.
